Homemade recipe wins Family Weekend Cook-off

During family weekend, UNF parents showed off their cooking skills and made their college student’s favorite homemade recipe. I was a judge during the cook-off and am reviving “College Cooking with Lori” this week to display the recipe of the Best Overall winner.

Mexican Lasagna

What you need:
• 1 lb lean ground beef
• 8 oz. sour cream
• 1 small can Mexicorn
• 1 pkg. taco seasoning
• 1 16 oz. jar Newman’s Medium Pineapple Salsa
• 2 cups shredded sharp cheddar cheese
• 4 eight inch flour tortillas

Preparation:
Preheat oven to 350 degrees. Brown the beef and drain. Add the sour cream, mexicorn, taco seasoning and salsa to the cooked beef.

Stir. Place ½ to ¾ cup of this on bottom of 8×8 pan. Sprinkle with cheese (approx ½ cup). Place tortilla on top of cheese.

Continue layering beef mixture, cheese and tortilla. Top with cheese.

Bake for 30 minutes. Serve with sour cream and salsa. Enjoy!

Makes 4 to 5 servings.
